My best friend, Donna, brought me a bag of wild blackberries that she picked from up near her cabin at Bear Flat near Payson. Thank you, thank you, thank you!! :) Just the other day, Elise at Simply Recipes posted a recipe for blackberry cobbler and I figured what better way to put them to use! The only change I made to her recipe was to use my Baking Mix for the topping. This would work well with any fruit that you have on hand, give it a try!

4 cups blackberries, rinsed
1/2 cup sugar, use more or less depending on how sweet the berries are
1 teaspoon lemon zest
1 tablespoon lemon juice
1/2 teaspoon cinnamon
2 tablespoons cornstarch for thickening
Place berries, sugar, lemon zest, lemon juice, cinnamon and cornstarch into a 9 x 9-inch baking dish; stir to coat berries evenly with sugar mixture. Let sit for 30 minutes.
1 1/2 cups Baking Mix
3 tablespoons sugar
4 tablespoons cold butter, cut into small pieces
1/4 cup milk
1 egg, lightly beaten
Preheat oven to 350 degrees. In a medium bowl, combine Baking Mix and sugar. Cut in butter until well combined, I use my fingers! :) Stir in milk and egg until a soft dough forms.
Use a large spoon to drop the dough onto the berries in mounds.
Bake for 30 to 40 minutes or until bubbly and cobbler topping has browned nicely.
Serve warm with a scoop of homemade vanilla ice cream (made with goat milk of course)!!

Looks great! Totally different than the recipe we use...but I think yours looks even better! I might have to give it a try...don't tell the family!

ReplyDeleteMy organic blackberries are just starting to ripen. Last year we almost od'ed on cobblers, coffeecakes, pies, was so good! We'll have a bumper crop this year :)

ReplyDeleteLucky you to have your own! It is well over 200 miles to get to Payson where these were picked. Donna called them "the most expensive blackberries in Arizona!" LOL!!
We planted some in our backyard when we first bougt our place 5 years ago, along with raspberries and boysenberries, yum! Took a couple of years to get going, but they're producing now! Thanks for the baking mix ideas, using them one by one...

1 cup Baking Mix
1 cup cornmeal
1/4 cup sugar
1/3 cup oil
1 cup milk
1 egg
Preheat oven to 400 degrees. Mix dry ingredients. Combine oil, milk and egg and add to dry ingredients stirring just until moistened. Pour batter into an 8-inch square greased pan or we like to bake ours in a 10-inch greased cast iron skillet, makes the bottom kinda crispy! :) Bake for 25 minutes or until golden brown. Don't forget to try adding chopped green chiles and cheddar cheese or jalapenos!
