Green Tomato Spice Cake


Yep, you read that right...Green Tomato Spice Cake!! :)

My blogging buddy, Teresa at Eden Hills posted the recipe recently for this cake and I just had to try it. Wow, I'm sooo glad I did and so is Jerry!! He was pretty skeptical when I told him I was going to make a cake with green tomatoes but once he tried it, he ate almost the whole cake! He even had some for breakfast this morning! LOL!!

This is a great way to use up the last of the green tomatoes from the garden and something different than green tomato relish. I highly recommend this cake and her Peach Pie Cake, if you haven't already tried it. Thanks for the great recipes Teresa! :)

  4. This sounds like a interesting cake. It definitely LOOKS like the sort of thing i like....worth a try i think.
    We have someone called Zumbo here in Sydney who makes amazing cakes out of unexpected ingredients...and unexpected combinations. His cakes also look like a work of art.

  20. I just made this. It is a great cake! Yours looks more dense than mine. Mine looks more cakey like Eden Hills. It doesn’t taste like a green tomato when cooked, but the flavor goes well with the spices and the taste lends itself very well to the sweetness of the cream cheese frosting. Yummy! Thanks for sharing this!

  23. I made another batch of muffins based on this recipe today and chopped up and froze some of my smaller green tomatoes that I didn't think would ripen for use later this winter. :)
