1 cup butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 eggs, beaten
1 teaspoon vanilla extract
3 cups Baking Mix
1 1/2 cups semi-sweet chocolate chips
1/2 cup chopped pecans
I know the picture shows a bag of walnuts but I really did use pecans in the cookies! :) I also used a tip from the MaryJanesFarm chat room about using granulated sugar and molasses to make your own brown sugar! Read about it here: DIY Brown Sugar. Thanks Megan!
Preheat oven to 375 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add Baking Mix; mix well. Stir in chocolate chips and pecans; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack to cool completely. Makes about 4 dozen cookies.
To make bar cookies, press dough into an ungreased 13 x 9-inch baking pan. Bake 25 to 30 minutes or until golden brown. Cool completely in pan. Cut into bars.
Here they are on the Goody Plate! :) These cookies are always very good but I think I might like the bar cookie version the best!
Must be cooking baking day, though I made 11 dozen chocolate chip cookies for Colin. Easy bar cookies are always good to have on hand.

That is too funny! I know if I don't put some in the freezer when I make a big batch, Jerry will just eat them and eat them until they are all gone!!
