It's getting to be that time of the year when I start thinking about holiday type cookies! I made these the other day using my Baking Mix, I love coming up with new recipes for the Baking Mix! :) They would be good anytime of course but dried cranberries and white chocolate chips always evoke the holidays for me and, to me, the holidays start in October! LOL!!
1/2 pound (2 sticks) butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups Baking Mix
1 teaspoon dried orange peel
1/2 teaspoon ground nutmeg
2 1/2 cups old fashioned oats, uncooked
1 cup dried cranberries
1 cup white chocolate chips
Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add Baking Mix, dried orange peel and nutmeg; mix well. Stir in oats, dried cranberries and chips; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake for 10 to 12 minutes or until golden brown. Cool for one minute on cookie sheet; remove to wire rack to cool completely. Makes about 4 dozen cookies.
