2 cups Baking Mix
1/4 cup cold butter cut into small pieces
1/8 teaspoon cayenne pepper
3/4 cup grated cheese
3/4 cup buttermilk
Preheat oven to 425 degrees. Place Baking Mix, butter and cayenne pepper in a bowl and cut in butter.
By the way, can anyone tell me why my pictures sometimes end up rotated when I upload them?!?
Stir in grated cheese. Make a well in the center and add the buttermilk all at once.
Stir together until a soft dough forms. Turn dough out onto a well floured surface. Dust the top with additional flour. Knead gently 8-10 times.
Pat dough into a rectangle about 12 x 8 inches and about 1/2-inch thick. Cut into sticks.
Place on an ungreased baking sheet and bake for 10 to 12 minutes or until golden brown.
Sample while still warm....repeat as necessary! :)

P.S. Since you mention Queso, you must know on what to use it! I have some but don't have any idea what to use it with, besides your awesome biscuits that is! Thoughts?
I used Queso it in her green chili casserole (instead of goat cheese) worked great! Cute sticks!

Queso would also be good on tacos, in enchiladas, even on a big salad! It is a nice mild cheese that goes with just about anything. Check out the "Sunday Brunch at the Lazy J Bar C" post for the Chile Relleno casserole recipe. :)
